Joseph works on the applications of physical methods to medical research. For 28 years he served as the director of the USDA Body Composition Laboratory of the Human Nutrition Research Center on Aging at Tufts University, where he used stable and radio-isotopes to study the process of aging. He is currently working on the development and validation of portable devices for bedside assessment of nutritional status, personalized preventive care, and international nutrition. In 2016 he became tenured professor ofnutrition and bioengineering at Drexel University in Philadelphia.
